How to make 7-10 gallons of apple butter!

Last weekend we had a very special couple of days with our dear friends the B family.  They shared with us their generational family tradition and we were blessed with fun, fellowship and fall enjoyment~

I have been given permission to share this family recipe with you (special thanks to Caroline and Stefanie for the photos!)…

Wash, peel, core and slice 4 bushels of tart sour apples. (We use Staymen Winesap or Pink Lady.)

Enjoy rich fellowship, goofy singing and lots of laughter, getting everyone involved from the oldest to the youngest…

Prepare stand over open fire. Set kettle over fire with 1 cup vinegar and 2Tbls. salt, for about 10 sec.. Scour down with rag and rinse with water.

Fill with 1/2 gal. of water. Start adding apples until it cooks up- continue adding and stirring. Don’t let fire wood touch kettle. Keep an even fire going. Stir constantly in a figure 8 style alternating back and forth.

 

Enjoy the fall day at the same time!

Cook until apples are cooked up, approx. 4 hours, until bubbles are thick.  Remember to stir constantly, so rotate people to stir…

Measure to see how many gallons you have and measure out sugar. (4lbs. sugar per gal.)
Pour sugar slowly alternating with the stirrer. This will cool the apples down. Bring back to a boil and cook 1 hour.

Have a picnic and more fellowship while you are waiting…

Add 1/2 cup vinegar and 1/3 oz.cinnamon oil.
( One bottle of cinnamon oil will last for several years)

Have your jars and lids sterilized and ready to assemble. Give everyone a job.

Dip out apple-butter with a small metal pot into a jar, pass to the next person who wipes off the top and then passes to the next person who puts the lid and rim on tight.( Make sure someone is still stirring. )

Continue until all the apple butter is gone.

 

Lick everything in sight, to taste the yummy goodness–lick the pot, the spoons…yes siree…everything!


Clean up and make a quadruple batch of homemade buttermilk biscuits.  I will post Nona’s recipe another time.
