Today is my son Jackson’s 17th birthday and he loves Hawaiian pizza! So, of course, we had to make that happen for him. Doesn’t it look delicious – it’s from Little Caesars!
Well, I am trying to stick to my Trim Healthy Lifestyle, so I definitely had to make myself something pizza-ish to celebrate today! I had the idea to make this protein-rich low-carb cheesy baked casserole and I have to say it turned out great and I didn’t feel deprived in the least!
Here’s the finished product!
And here’s how I made it! (I’ll put all the details in the recipe at the bottom of the page.)
Start by mixing ricotta cheese, parmesan cheese, egg, chopped kale, Italian seasoning, and garlic powder. Put it in the bottom of a small 6×9 rectangular stone baker.
Then top with pizza sauce and mozzarella cheese! YUM!
Put it in the oven and bake up the gooey, cheesy, goodness!
Here’s the full recipe! Note that this serves 4 and is great alongside a big salad! Each serving is just over 200 calories, 14 grams of fat, and 18 grams of protein! You could also top this with pepperoni or your favorite pizza toppings! This would also make a great “pizza dip” if you have some healthy low carb bread or crackers to dip!
If you don’t think you like kale, you might be surprised that you can barely notice it in this recipe even though it’s got a full cup of frozen kale! All the cheese and Italian flavors makes the kale just melt in your mouth! You could try it with other greens if you have them handy but definitely get your veggies in there somewhere!
Cheesy Pizza Bake
- 8 ounces part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1 cup frozen chopped kale (no need to thaw or pre-cook)
- 1/2 cup sugar-free pizza sauce
- 1/2 cup part-skim mozzarella cheese
- Optional pizza toppings of choice
In a medium bowl stir together the ricotta, Parmesan, egg, seasonings and kale. Spread mixture into a 6×9 small rectangular baker (I use Pampered Chef stoneware, but use whatever small baking dish you have available). Top with the sauce and then the cheese and add your favorite pizza toppings if using.
Bake at 425 for 25-30 minutes.
