We all know this time of year can be hard to resist temptation. Cookies, cakes, pies, and other treats are around every corner. Hey, we all choose to indulge a little, but we don’t have to throw in the towel completely this time of year! This recipe will help you avoid temptation and satiate you with healthy fats, protein, and fiber! These little cookie dough bites are sugar, dairy, gluten, and egg free! If you’ve never tried Trim Healthy Chocolate Chips, they are amazing – you’d never know they were sugar-free. They are the only chocolate chips on the market that don’t have any fillers or preservatives! Just pure organic cocoa bean, organic cocoa butter, erythritol, stevia, vanilla bean, and organic sunflower lecithin. These are the smoothest dark chocolate you’ll ever have! Cookie Dough Bites

Cookie Dough Bites (Single Serve Recipe)

* 3 Tbsp Peanut Flour
* 1 pinch mineral salt
* 1/2 Tbsp Gentle Sweet (or sub Truvia or other sweetener of choice)
* 1/2 Tbsp Coconut Oil
* 1/2 Tbsp Water
* Splash vanilla extract
* 1/2 Tbsp Sugar-Free Chocolate Chips
* 1/2 Tbsp chopped pecans (optional)

In a small bowl, stir peanut flour, salt, sweetener, coconut oil, water, and vanilla well until a soft dough forms. Add a little more water, if needed, to get the right cookie dough consistency. Stir in chocolate chips and optional nuts, if using. Roll into 3 cookie dough bites and enjoy as an afternoon snack or a quick and easy dessert! Or, if you’re like me, just dig in with your spoon… no need to get all fancy!
