Cookie Dough Bites (Single Serve Recipe)
* 3 Tbsp Peanut Flour
* 1 pinch mineral salt
* 1/2 Tbsp Gentle Sweet
* 1/2 Tbsp Coconut Oil
* 1/2 Tbsp Water
* Splash vanilla extract (or maple extract)
* 1/2 Tbsp Sugar-Free Chocolate Chips
* 1/2 Tbsp chopped pecans (optional)
* Gentle Sweet for rolling (optional)
In a small bowl, stir peanut flour, salt, sweetener, coconut oil, water, and vanilla well until a soft dough forms. Add a little more water, if needed, to get the right cookie dough consistency. Stir in chocolate chips and optional nuts, if using. Roll into 3 cookie dough bites and roll in Gentle Sweet (optional). Enjoy as an afternoon snack or a quick and easy dessert! Or, if you’re like me, just dig in with your spoon and don’t even worry about rolling into balls… no need to get all fancy when you’re needing a quick, sweet treat!

We have peanut allergies in our household. Could I use THM Baking Blend or Almond Flour? Thanks!
I think almond flour would work, but I’ve not tried it. Let me know how it turns out if you do it! 😀
These are delicious! I added a pinch of baking soda for a truer cookie dough taste. Loved it.
Oh, what a smart mama you are! So glad you enjoyed them! 😀
