I have named this delectable dessert, Fudgy Peanut Butter Buckeye Brownies. But, I almost named these Mother’s Day Buckeye Brownies as they really are so perfect for Mama! They are chocolatey and peanut buttery, yet they only contain healthy fats and no sugar! If you are following Trim Healthy Mama, these are a fantastic S treat! These are sweetened with THM Gentle Sweet, which is by far the best natural alternative sweetener on the market (I’ve tried them all as I’ve been sugar-free for over 5 years now!). Gentle Sweet is a perfect blend of xylitol, erythritol, and pure organic stevia extract. Totally non-GMO and 100% natural and minimally processed! And the best part? It tastes JUST LIKE SUGAR!

So, you’re going to melt your chocolate and butter w/ your cream. If you’re like me, you’re going to use the microwave. 😉
It’ll look like this after you add the eggs and other brownie ingredients!
This is a flourless, rich, almost fudge like brownie!
While the brownie is baking up, make the peanut butter mixture!
And then the chocolate topping!
Finally, the chopped nuts! I use the Pampered Chef Food Chopper to make this super easy!
And after it’s chilled and ready to eat! YUM!!
Fudgy Peanut Butter Buckeye Brownies
(are they brownies or are they a fudgy candy? I really am not sure…)
For the Brownies:
4 ounces unsweetened Baker’s Chocolate
1/2 cup heavy cream
3 Tbsp butter
1/2 cup THM Gentle Sweet
1 Tbsp vanilla
2 Tbsp brewed coffee
4 eggs
Preheat oven to 325 degrees and grease an 8×8″ square pan with coconut oil cooking spray.
Melt the chocolate, cream, and butter in a double boiler over medium-low heat or microwave in 30 second increments until melted and smooth. Remove from heat.
Add vanilla, coffee, sweetener, and eggs (one at a time) and whisk mixture well.
Pour into prepared pan and bake for 45 minutes.
Peanut Butter Topping:
1 cup sugar-free natural peanut butter
1/4 cup THM Gentle Sweet
2 tsp vanilla
Mix the peanut butter, sweetener, and vanilla together. You may want to add some mineral salt if your peanut butter doesn’t have it added already. Adjust sweetener to taste (I like it very sweet!).
Spread peanut butter mixture over warm brownies!
Chocolate Topping:
1 ounce unsweetened’s Baker’s Chocolate
3 Tbsp heavy cream
2 Tbsp THM Gentle Sweet
Melt the chocolate and heavy cream together in a double boiler or microwave in 30 second increments until it’s smooth and melted. Add sweetener and stir in a little more heavy cream if needed to make it pourable.
Pour over the peanut butter mixture!
Nut Topping:
1/3 cup raw peanuts
Chop nuts (can use roasted if you prefer… whatever you have on hand). I used the Pampered Chef Food Chopper to make this very easy! Sprinkle on top of chocolate topping.
Cover and refrigerate at least an hour to let everything set up and get super fudgy!
Cut into 16 small squares and enjoy the rich chocolaty, peanut buttery yumminess!
