Green Eggs & Ham (THM S Recipe)

This is a great company breakfast and it's quick and easy and requires no special ingredients! What kid wouldn't want to eat a breakfast with a Dr. Seuss theme?  And what parent doesn't want to hear, "Say! I like green eggs & ham!" (especially when the green is greens!)

Servings 6

Ingredients

  • 1-2 Tbsp coconut oil (or butter)
  • 1/2 cup red onion, diced (or use whatever color onion you prefer)
  • 6 oz Canadian bacon, diced (ham or turkey ham works too!)
  • 12 whole eggs
  • 3 Tbsp water
  • 1/2 cup cheddar cheese, shredded
  • 1 cup kale (fresh or frozen... or you can use spinach!)

Instructions

  1. Cook the onion and Canadian bacon in coconut oil over medium heat until the onions are soft and the Canadian bacon is browned up. 

  2. Add the kale (defrost if using frozen) and cook for a few minutes until wilted. 

  3. Whisk the eggs and water together and pour over other ingredients.  Continue to cook over medium heat, stirring frequently as the eggs cook. 

  4. Once your eggs are cooked, remove from heat and stir in the cheese to let it melt. 

Recipe Notes

Because this recipe calls for Canadian bacon and cheese which can be sort of salty, I don't include salt and pepper in the recipe itself, but encourage you to have them available when you sit down to eat! 

Also, if you are in S Helper or Crossover mode, you can enjoy 1 slice of sprouted whole grain toast for an S Helper or 2 slices for a full Crossover!
